Grilled Flank Steak Bowls with Pistachio Herb Sauce
Grilled flank steak over rice with a pistachio-herb sauce and quick asian green beans. The finished product is much more impressive than the effort that goes into this.

I love beef, I love switching up the cut of beef, and I love the sauce. Amber and I eat this weekly. It cooks quickly and doesn't require too many dishes if you grill the beef and microwave the green beans.
Ingredients
For the steak:
- 1 lb flank steak (grass-fed ideal)
- Olive oil, light coating
- Salt and pepper
For the sauce:
- 1/2 cup pistachios, rough chopped
- 1 bunch parsley
- 1 bunch Thai basil
- 1-2 cloves garlic, minced or grated
- 1/4 cup or so good olive oil
- 1/4 cup or so red wine vinegar
- 1 tbsp honey
- 2 tsp crushed Calabrian chilis (from a jar)
- Splash of soy sauce
For the green beans:
- 1 bag green beans
- Hoisin to taste
- Sriracha to taste
- Soy sauce to taste
- Garlic powder
- 1 lime wedge
For the bowl:
- 1 cup medium-grain rice
Mise en Place
- Wash rice and get it started
- Mince or grate garlic
- Rough chop pistachios by hand
- Chop parsley and Thai basil
Instructions
- Start the rice cooker.
- Light the grill and get it ripping hot. You need ripping heat to get a crust on a thin cut.
- Combine olive oil, red wine vinegar, garlic, honey, Calabrian chilis, and soy sauce in a bowl. Add pistachios, parsley, and Thai basil. Stir, taste, adjust.
- Coat the steak lightly in olive oil. Season well with salt and pepper. It's a thin cut, so don't go as heavy on the salt as you would a ribeye, but still be generous.
- Grill undisturbed 7-8 minutes, rotating halfway through if you want crosshatch marks.
- Flip and cook to around 130°F. Flank steak is best around medium. I think it's a bit chewy below that.
- Pull the steak and let it rest 5-10 minutes.
- While it rests, microwave the green beans 4-5 minutes. Toss them in a bowl with hoisin, sriracha, soy sauce, garlic powder, and a squeeze of lime. Taste and adjust.
- Serve rice in bowls, green beans on the side. Slice the steak against the grain, cube for Amber, lay it on top, and drench everything in the sauce.
Notes
- We've had some flavorless flank steaks on multiple occasions. The grass-fed steaks from HEB are far better. As of right now, about $20/lb.
- Green beans can be done however you'd like. Microwave is just easy for weeknight and what we like.
- Cook the steak however you'd like and cook whatever cut.
